Vegan Cowboy Cookies

Serves: 3 dozen giant cookies
 
Ingredients
  • 2 c unsweetened shredded coconut
  • 1½ c vegan butter
  • 1½ c granulated sugar
  • 1½ c light brown sugar
  • ½ c applesauce
  • 1 Tbsp vanilla
  • 3 c flour
  • 1 Tbsp baking powder
  • 1 Tbsp baking soda
  • 1 Tbsp ground cinnamon
  • 1 tsp salt
  • 3 c chocolate chips
  • 3 c rolled oats
  • 2 c chopped pecans
Instructions
  1. Preheat oven to 350°.
  2. Measure coconut into a small bowl and stir in 1 tbsp warm water and 2 tbsp sugar; set aside.
  3. In a large bowl, whip the butter.
  4. Add sugars and cream.
  5. Add applesauce and vanilla and beat.
  6. In a medium bowl, sift together the flour, powder, soda, and spices.
  7. Add to wet ingredients and beat until well mixed.
  8. Fold in the coconut, nuts, oats and chocolate chips until evenly distributed.
  9. Use an ice-cream scoop to scoop balls of dough for jumbo cookies, and flatten slightly.
  10. Bake on greased sheets for 10-12 minutes, or until golden.
