CASHEW BUTTER COOKIES



1 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1 tbsp Apple Butter/Apple Sauce
1/2 cup light brown sugar
1/2 cup cashew butter
1/4 cup earth balance
3 tbsp soy milk
1/2 tbsp vanilla extract
Cashews for garnishing
Preheat the oven to 375.
In a bowl, whip the sugar, apple butter, and Earth Balance until light and fluffy.  Add the cashew butter, soy milk, and vanilla and mix well.
Add the flour, baking soda, and salt; blend together until dough forms.
Drop rounded tablespoons or ball up the dough on a cookie sheet and flatten slightly with your palm.  Add a cashew in the middle.
Bake for 10-12 minutes, until the edges turn slightly brown.  Let cool until you just can’t stop yourself from sticking one or three in your mouth.
