Cashew Sour Cream

Ingredients:
  • 1 cup soaked unsalted cashews
  • 3/4 cup water
  • 1/4 cup apple cider vinegar
  • 2 tbsp lemon juice
  • pinch of salt

Directions:
  1. Soak cashews. If you have a powerful blender such as a vitamix, don’t need to soak the cashews. If you have a regular blender, you will need to soak for at least 6 hours or overnight. Tip: Soaking in boiling water helps to speed up the time.
  2. Drain cashews and add all ingredients to blender. Blend until smooth and white. Add more apple cider vinegar or lemon juice if desired. Store in the fridge in a container with a tight seal, or in a mason jar.

Vegan Caesar Dressing

Ingredients:
  • 1 cup cashews (soaked for 4 hours)
  • 1 tbsp almonds
  • 2-3 cloves of garlic, to taste
  • 2 tbsp lemon juice
  • 1 tbsp nori
  • 1 tsp mustard
  • 3/4 tsp nutritional yeast
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 cup water
Instructions:
  1. Shred some of a nori sheet (for sushi) into little strips. Enough for 1 packed tablespoon.
  2. Blend all ingredients together in a blender. If you have a very powerful blender you do not need to soak the cashews.
  3. Adjust seasonings to taste if needed.
  4. Chill before serving. Serve with salad, wraps, sandwiches, and more!

Easy Vegan Ranch dressing

Simple Vegan Ranch Dressing - This simple vegan ranch dressing is a healthier alternative to the classic recipe. It's perfect for salads or as a dip with tortilla chips, crudités, etc.

  • Yield: 32 tbsp (2 cups)

INGREDIENTS

  • 1 cup unsalted raw cashews (140 g)
  • 1/2 cup plant milk of your choice, we used soy milk (125 ml)
  • 2 tbsp lemon juice
  • 1 tbsp yellow mustard (optional)
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped chives
  • 1 tsp dried dill
  1. Soak the cashews overnight or for at least 4 hours.
  2. Add all the ingredients (except the parsley, chives and dill) to a blender and blend until smooth.
  3. Add the mixture to a mixing bowl and mix with the parsley, chives and dill until well combined.
  4. You can serve the dressing immediately, although I think it tastes better when is cold.
  5. Keep the vegan ranch dressing in a sealed container in the fridge for 3 to 4 days.

NOTES

  • Add any spice or fresh or dry herb you like.
  • Add more or less milk depending on how thick you want your vegan ranch dressing.

Vegan Ranch Dressing

serves ½ c. Dressing
INGREDIENTS
  • ½ c raw cashews, soak for 30 minutes with boiling water in a bowl, drained* (see notes)
  • ¼ c. filtered water
  • ¼ c.   nondairy milk
  • ¼ of a medium red onion, skin removed
  • juice of ½ lemon
  • ½ tsp. raw apple cider vinegar
  • ¼-1/2 tsp. sea salt
  • fresh ground pepper
  • 2-3 Tbsp. fresh parsley
INSTRUCTIONS
  1. In a high-speed blender, all everything together except for the parsley until completely smooth. If you like a thinner dressing, add a little water at a time until desired consistency is reached.
  2. Add parsley and pulse until it is roughly chopped but not blended to the point where the dressing is now completely green.
  3. Adjust the salt and pepper according to taste.
  4. Chill for an hour. Stays fresh for 3-4 days in fridge in an air-tight container.

Cilantro Lime Dressing Recipe

Coats 2 salads (or 1, depending on how greedy you are with your dressing)
INGREDIENTS:
  • 1/2 c. cashews
  • juice of 1 lime
  • juice of 1/2 lemon
  • 4 Tb water
  • 2 medium handfuls of cilantro
  • 1 garlic clove
  • 1-2 tsp jalapeno (1/4 of a whole jalapeno)
  1. In a high-speed blender, place the cashews, lime/lemon juice, and water inside and blend. Depending on what type of consistency you want in a dressing, add (or not) more water by the tablespoon.
  2. Throw in the rest of the ingredients into the blender until combined but not necessarily completely smooth. You want those small chunks in that dressing–it’s the best part!

Garlic Tahini Dressing

Ingredients
  • 1/2 cup raw tahini
  • 1/2 cup fresh lemon juice (about 4 lemons)
  • 1 clove garlic (or 1/2 teaspoon garlic powder)
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 1/4 cup water , or more for desired consistency

  1. Combine all of the ingredients in a blender, and blend until smooth and creamy! Add more water to thin, if desired. (It will thicken up once chilled.)
  2. Serve generously over your favorite veggies, or as a dip.

BBQ RANCH DRESSING (VEGAN, GLUTEN-FREE, OIL-FREE)



Creamy BBQ Ranch Dressing –A creamy dreamy dressing worth slathering on everything from salads to tacos & burritos! This healthy dressing is vegan, oil-free and gluten-free! It also has a nut-free option to make it 100% allergy friendly.

Yields Dressing for 2 dinner salads or 4 side salads

INGREDIENTS
1/2 cup organic raw cashews, soaked*
1/2 cup non-dairy milk, if needed, add more to thin the dressing
1-2 Tablespoon fresh organic lemon juice
2 Tablespoons organic BBQ sauce
1/2 teaspoon pink salt or sea salt
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
Fresh ground pepper to taste
1/4 teaspoon dried parsley
1 Tablespoons fresh chives

INSTRUCTIONS



Place all the ingredients (except parsley and chives) into your blender. Blend until creamy.
Pour the dressing into a bowl and stir-in the parsley and chives.
Place the dressing in the fridge to cool for at least 30 min to an hour. If needed, add more non-dairy milk to achieve desired consistency.
Enjoy this creamy BBQ ranch drizzled over your favorite salad, tacos or burritos.

How To Make Aquafaba

If you’ve been paying attention to the food world over the past several months, you may have encountered the miraculous discovery of aquafaba. In case you don’t know, aquafaba is the liquid that you find in cans of chickpeas (and other legumes). Aquafaba translates to “bean water” and was discovered by a community of people (but largely Goose Wohlt and Joël Roessel). It is my new favorite ingredient for replacing eggs, and I’m kind of obsessed. Not much is known about the nutritional/chemical breakdown of aquafaba yet, but here are a few things you should know about this magical liquid.

SUBSTITUTING FOR EGGS

3 tablespoons of aquafaba replaces 1 whole (large) egg.
2 tablespoons of aquafaba replaces 1 egg white.

USES FOR AQUAFABA

Aquafaba whips up like egg whites and can be used for meringues, pavlovas, and marshmallows, and it can also be used in its liquid form in some baking applications. People are still experimenting to find all the uses for aquafaba, but so far I have personally used it as a replacement in quick breads and cookies, and I’ve made mozzarella cheese that melted beautifully on a pizza. I’m looking forward to more experimentation, but I recommend joining the Vegan Meringues Facebook group if you are interested in learning more. One great thing about aquafaba, compared to egg whites, is that you can’t really overwhip it.
Be wary, though. Because aquafaba is so new to the culinary world, not all its uses have been discovered and it’s not entirely scientific. Replacing large quantities of egg whites, like in angel food cake, hasn’t worked for anyone so far. When we tried to use it to replace eggs in a non-vegan cornbread recipe, the cornbread wouldn’t set up in the middle. So if you’re experimenting, be prepared for some failures, or use a recipe that has already been tested with aquafaba! 

DOES IT TASTE LIKE BEANS?

Aquafaba kind of has a funky smell, but don’t let that scare you. Once it’s whipped or used in baked goods, I haven’t detected any bean-like flavor. Even in the meringues, which were just aquafaba and sugar (and a little vanilla). Some people are more sensitive, so if you find the chickpea aquafaba to be too aggressive, the aquafaba from cannellini beans is more neutral.

WHERE TO GET AQUAFABA

The easiest and fastest way to get aquafaba is to buy a can of chickpeas, and drain the liquid through a sieve into a container. If you can find unsalted or low-sodium canned chickpeas, all the better. I typically use regularly salted canned chickpeas, and I don’t think it has made desserts too salty, but you could always reduce the salt in the recipe if you find it necessary.
If you want to avoid the preservatives, additives and/or BPA that is often found in canned chickpeas, you can always make your own! See the recipe below for instructions on how to do it.

STORING AQUAFABA

I’ve successfully used aquafaba from the refrigerator for up to a week. If I need to store it longer than that, I like to divide it among ice cube trays and freeze it. Putting 1 tablespoon into each slot in the ice cube tray makes measuring easy.

INGREDIENTS
  1. 4 cups dried chickpeas
  2. 1 teaspoon kosher salt
  3. 12 cups water
INSTRUCTIONS
  1. Place chickpeas and salt in the insert of a slow cooker. In a large saucepan, bring water to a boil. Pour the boiling water over the chickpeas. Cook on low for 9-10 hours, until the chickpea liquid is about 1/2-inch above the chickpeas. Turn off the slow cooker and allow to cool at room temperature for at least 4 hours and up to 8 hours. As the chickpeas and liquid cool, the chickpeas will absorb a bit more of the liquid and it will just cover the top of the chickpeas. The liquid will become viscous and gel-like as it cools.
  2. Place a fine mesh strainer over a large bowl. Strain the chickpeas out, catching the aquafaba in the bowl. Transfer the aquafaba to jars or other covered container. Refrigerate for up to a week or freeze for longer storage.*
NOTES
  1. *Consider freezing the liquid in 1-2 tablespoon amounts in ice cube trays for easy thawing and measuring.

Vegan Garlic Aioli

Ingredients

½ cup vegan mayonnaise
3 garlic cloves minced
½ lemon juiced
½ teaspoon Dijon mustard
Instructions

Add all of the ingredients in a bowl and stir until evenly mixed.
Taste the aioli to see if the mixture needs more garlic or mayonnaise added to it based on your taste preferences.
Cover the bowl with plastic and keep refrigerated until ready to use.
