COOKIES
- 2 sticks (1 cup) Earth Balance® Vegan Buttery Sticks, softened
- 1 cup coconut sugar
- 1 cup vegan eggnog
- 1 flax egg (1 tablespoon flaxseed meal + 2.5 tablespoons water, set aside)
- 3 and ¾ cup flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon nutmeg
VEGAN EGGNOG GLAZE
- 1 and ½ cup powdered sugar
- ¼ cup vegan eggnog, or more depending on desired consistency
- 1 teaspoon light Karo syrup
- ½ teaspoon nutmeg for dusting
STEPS
1.
Mix together butter and sugar.
2.
Add in vegan eggnog and flax egg, stirring to combine.
3.
Add flour, baking powder, baking soda, salt, and nutmeg.
4.
Chill for at least one hour.
5.
Preheat oven to 350°F and line a baking sheet with parchment paper.
6.
Drop teaspoon-sized balls onto baking sheet, and bake for 8-10 minutes.
7.
After removing from the oven, lightly press the tops of the cookies with a spatula to flatten a bit. Allow cooling before frosting.
8.
Frost with eggnog frosting and sprinkle with nutmeg.
