Eating a 95 percent plant-based diet, focusing more on plant-based foods and less on animal-based foods seems right for me. I noticed on Meat free days I feel more energized. It’s well worth the effort to consume less meat and dairy even if you don’t eliminate it entirely. There are so many more nutrients in vegetables. Herbs and vegetables have so many medicinal benefits. Most of my recipes here are vegan. Take this journey with me!
Vegan steak
meat... 1 cup Vital Wheat Gluten 2 tbsp nutritional yeast 2 pinches sage 1/2 OR 1 pkg. yeast ( quick active ) 1 tbsp. mushroom powder 1 tbsp. chickpea flour 1 tbsp olive oil 1/8 cup soy sauce 1/2 cup water broth.... 5 cup water 1/2 a lime a handful of garlic cloves 1/4 cup soy sauce 2 tbsp. paprika 2 bay leaves
Combine the broth ingredients and bring to a simmer.
Meanwhile, combine the meat ingredidents. Knead until well mixed.
Then cut the dough into 2-4 pieces.*
Form each into a ball, then flatten into a disk.
Lightly flour the counter and rolling pin and roll out each piece of dough as thin as possible – about ¼ inch.
When the broth is simmering, carefully add the seitan. Cover and simmer for an hour, flipping the pieces over every 10-15 minutes.
Let cool and then use in your favorite "beef" recipe, or store with any remaining broth in the refrigerator. It will keep for 4-5 days.
