Vegan Sour Cream

(Makes 2 servings)

Ingredients

  • 1/2 cup cashews, presoaked
  • 1/3 cup water
  • 1 tbsp onion powder
  • 1/4 tsp garlic powder
  • 1 1/2 tbsp apple cider vinegar
  • 1/4 tsp sea salt
  • 2 tbsp minced fresh parsley

Directions

Combine the soaked cashews, water, onion powder, garlic powder, vinegar, salt, and parsley in a blender and process until smooth, stopping the machine and scraping down the sides if needed (this may take several minutes). 


 Enjoy immediately or keep in an airtight container in the fridge for up to a 5 days.
