Ingredients
- 1 tablespoon Coconut Oil (or EV Olive Oil)
- 2 (8 oz) packages Tempeh [cut half lengthwise then sliced]
- 4 cloves Garlic [minced]
- 2 tablespoons Sesame Seeds
- 1-2 Tablespoons Soy Sauce (depending on your tastes)
- 2 teaspoons Maple Syrup
- 2 tablespoons Vegetable Broth
- 3 Green Onions (scallions) [Sliced]
- 4 cups (about 10 oz) Broccoli (I used frozen)
- Juice of ½ Lime
- Optional: Rice to serve
Instructions
- In a large pan add the coconut oil and tempeh
- Fry until golden, about 5 minutes stirring occasionally
- Add the garlic and sesame seeds
- Contiune to cook until the garlic softens and becomes fragrant, about 2-3 additional minutes
- Add the soy sauce, maple syrup, and veggie broth
- Add the scallions and broccoli and cover (I use aluminum foil) to allow the broccoli to steam for about 5 minutes
- Add the lime juice and stir well
- Taste for seasoning, feel free to add additional soy sauce if you think it needs it
- Serve and enjoy!!
