Vegan Sticky Stir Fry

Ingredients
  • 1 tablespoon Coconut Oil (or EV Olive Oil)
  • 2 (8 oz) packages Tempeh [cut half lengthwise then sliced]
  • 4 cloves Garlic [minced]
  • 2 tablespoons Sesame Seeds
  • 1-2 Tablespoons Soy Sauce (depending on your tastes)
  • 2 teaspoons Maple Syrup
  • 2 tablespoons Vegetable Broth
  • 3 Green Onions (scallions) [Sliced]
  • 4 cups (about 10 oz) Broccoli (I used frozen)
  • Juice of ½ Lime
  • Optional: Rice to serve
Instructions
  1. In a large pan add the coconut oil and tempeh
  2. Fry until golden, about 5 minutes stirring occasionally
  3. Add the garlic and sesame seeds
  4. Contiune to cook until the garlic softens and becomes fragrant, about 2-3 additional minutes
  5. Add the soy sauce, maple syrup, and veggie broth
  6. Add the scallions and broccoli and cover (I use aluminum foil) to allow the broccoli to steam for about 5 minutes
  7. Add the lime juice and stir well
  8. Taste for seasoning, feel free to add additional soy sauce if you think it needs it
  9. Serve and enjoy!!
