Eating a 95 percent plant-based diet, focusing more on plant-based foods and less on animal-based foods seems right for me. I noticed on Meat free days I feel more energized. It’s well worth the effort to consume less meat and dairy even if you don’t eliminate it entirely. There are so many more nutrients in vegetables. Herbs and vegetables have so many medicinal benefits. Most of my recipes here are vegan. Take this journey with me!
Sofrita Bowl

Ingredients
1/2 pound firm tofu
1/3 package taco seasoning mix
1/4 cup salsa
1 package pre-cooked frozen brown rice from Trader Joe's
1 cup kale or chopped romaine
1/2 tomato, chopped
1/3 avocado, cubed
1/2 lime (optional)
1/4 cup cilantro (optional)
1/2 cup black beans (optional)
Hot sauce (optional)
STEP 1
Pour 1/4 jar of salsa into a skillet. Cube tofu into 1-inch squares and add to skillet. If using black beans, add to skillet as well. Cook until warmed through, about 5 minutes.
STEP 2
If making a burrito bowl, place 1 package of Trader Joe’s pre-cooked frozen brown rice into the microwave and heat for 3 minutes until cooked, following instructions on package.

STEP 3
Once cooked, add juice of one lime, cilantro, and salt and pepper to taste. If using regular rice, cook according to directions on package.

STEP 4
Sprinkle taco seasoning over tofu. Heat tofu over medium heat and break up with a spoon as you go. Toss tofu, making sure it is evenly heated and coated in taco seasoning, 4-6 minutes.
STEP 5
Cube avocado and tomato.
STEP 6
If making tacos, add tofu mixture into corn tortillas, and garnish with lettuce or kale, tomatoes, salsa, avocado, and/or hot sauce as desired.
STEP 7
If making a bowl, assemble by layering brown rice, lettuce or kale, tomatoes, tofu mix, and garnish with salsa, avocado, and/or hot sauce as desired.
