Ingredients:
- 3 Tbsp. arrowroot powder (or cornstarch)
- 1/2 c. water
- 1/2 tsp. garlic powder
- 3 Tbsp. soy sauce
- 1 Tbsp. brown rice vinegar
- 1 small onion, sliced thinly
- 1 Tbsp. olive oil
- 4 c. broccoli florets
- 1 package beefless tips (Gardein is my favorite, but you could make your own seitan or use another brand)
- 2 c. water
- 1 c. brown rice (or any other whole grain)
Directions:
Cook the brown rice in 2 cups water according to directions, for about 45 minutes.
In a large saucepan or wok, heat up the olive oil. Add in the onion and cook until translucent, about 5-10 minutes. Add in the beefless tips and allow them to warm up.
In a small measuring cup, combine the 1/2 cup water and arrowroot powder, and still until dissolved. Add in the soy sauce and vinegar, and then add in the garlic powder. Add this liquid to the cooking onion pan and stir to deglaze the pan.
Add the broccoli florets and cover the pan. Cook for 2-5 minutes, until the broccoli is slightly tender but still bright green. Stir to combine the flavors and serve over cooked brown rice or your favorite whole grain.
