Broccoli & Nut Butter Tofu Stir fry




Recipe
Cooked noodles of your choice
1/2 block firm tofu; diced
1 bell pepper, diced
1 cup broccoli florets 
1 onion, diced
2 garlic cloves, minced
Any other veggies you have 
1 tablespoon nut butter (I used Wowbutter which is a nut-free spread that tastes like PB)
1 tablespoon hoisin sauce
3 tablespoons warm water
1 tablespoon soy sauce + more if needed
Salt pepper
Chili garlic sauce (optional)
Oil
Sesame seeds

1. In a small bowl, mix nut butter, hoisin sauce, soy sauce, chili garlic sauce (to taste; optional), sesame seeds and water. Add in the tofu and stir until all the pieces are coated. Let marinate for about 20 minutes or more.
2. Heat oil over medium-high heat in a large pan. Fry the garlic and onion until soft; about 3 minutes. Add in the tofu and remaining sauce. Fry for about 10 minutes or until the tofu is browned.
3. Add in the bell pepper and cook for another 5 minutes. Stir in the broccoli and cook until soft, but be careful not to overcook or it will wilt.
4. Stir in your noodles, and add extra soy sauce if needed. Serve! Enjoy!
